Namtok moo

This spicy dish of grilled pork steak, which takes its name meaning ‘waterfall’ from the cascade of different flavours it embodies, is a common accompaniment to other northeastern staples like somtum papaya salad, grilled chicken and the obligatory basket of sticky rice. The lightly cooked pork is mixed with a flurry of other ingredients including mint, roasted rice, chopped spring onions, lime juice and plenty of chilli. The result is a zingy base that works particularly well if the pork cut is a little fatty. I regularly enjoy this dish at my local somtum stall beneath Udomsuk BTS station, my current favourite in all Bangkok.
