While the street food staple for many Thais is pad krapao, mine is pad prik gaeng – like them, it’s what I order when I don’t know what else I want. I normally take my prik gaeng with pork – it is stir fried with red curry paste, a few vegetables and some kaffir lime leaves, and served over a plate of steamed white rice. Today, the lady at the market in Udomsuk was all out of pork, so she offered to make my lunch with squid instead. And you know what? It worked well, and tastes even better than pork. It might well become my regular choice!
